2-Day Bleu d’Auvergne Cheese Making Workshop
Led by NMCG Cheesemaking Instructor, Cedar Love-Williamson:
Schedule: Saturday (10:00 AM – 3:00 PM) & Sunday (10:00 AM – 12:00 PM)
Skill Level: Intermediate / Advanced (Beyond basic cheesemaking)
Discover the fascinating microbiology and art behind one of the world's most complex dairy styles: artisan blue cheese. In this hands-on, two-day weekend workshop, expert cheesemaker Cedar Love-Williamson guides you through the precise techniques needed to culture, pierce, and age your own small rustic blue wheel.
Move beyond basic cheesemaking as you learn to manage Penicillium roqueforti cultures, practice temperature-controlled acid development, and gently handle delicate curd to preserve open internal cavities. You’ll practice hand-salting, learn the science of needle-piercing to allow oxygen into the wheel, and gain key insights into establishing a cave-aging environment that develops rich, bold, blue-veined complexity.
